Forest

At the start of a new game much of the map will be covered in forest. When placing a structure on land occupied by trees laborers will automatically chop them down, leaving behind logs.

Natural forest is decades old which allows the collections of herbs by a herbalist. New trees planted by a Forrester, who can also chop down trees to create logs, will not contain these valuable herbs.
